Pad Thai in Shoreline
Pad Thai is a wok dish of thin rice noodles tossed with egg, bean sprouts, green onion and preserved turnip, in a sauce whose backbone is tamarind — sour first, then sweet, then salty. Done well it is dry rather than saucy, and each noodle is separate and slightly chewy, with wok smoke on it.
It is the dish most people already know, and we make it the way it should be rather than the sweet orange version it often becomes outside Thailand.
The rest of our menu leans Isan and Lao — grilled meats, pounded salads, fermented things. If you came for pad thai, order it and let someone at your table order a papaya salad. That is how most people find the rest of what we do.

Questions people ask
- What is the difference between Pad Thai and Pad See Ew?
- Different noodle and a completely different sauce. Pad Thai uses thin rice noodles in a tamarind sauce — sour, sweet and dry, finished with peanut and bean sprouts. Pad See Eiw uses broad flat noodles with Chinese broccoli and egg in dark soy sauce, so it is savoury, sweeter and darker, with no sourness at all.
- What is the difference between Pad Thai and drunken noodles?
- Drunken noodles is Pad Kee Mao, and it is the spicy one. Broad noodles, holy basil, chilli, bell pepper and string beans — savoury and hot, with no tamarind and no peanut. Pad Thai is the sour-sweet one and is mild by default.
- Is your Pad Thai spicy?
- Not by default — it is the mildest of our three noodle dishes. If you want heat, ask, or order the Pad Kee Mao instead.
- Can I get it vegetarian?
- Tofu and vegetable are both listed protein choices. We will not label the finished dish vegetarian, though, because Thai cooking uses fish sauce widely and we have not verified every component for that purpose. Tell your server what you need to avoid and ask — call (206) 644-8350 before ordering if it matters.
- If I like Pad Thai, what else should I try here?
- Our Tum Thai papaya salad is the gentlest step into what this kitchen actually specialises in, and Gai Yang — grilled chicken with tamarind chilli sauce — is an easy one to share. Both sit beside a Pad Thai comfortably.
